Strawberry Almond Chia Parfaits

Ingredients:
- 2 cups almond milk
- 6 frozen strawberries
- ½ tsp. maca powder
- ½ tsp. chaga powder
- 6 tbsp. chia seeds
- Non-dairy yogurt for layering
- To garnish: fresh and/or freeze-dried strawberries and shaved almond
- OPTIONAL: add Collagen Powder or Vegan Protein
Method:
1. Add almond milk, frozen strawberries, maca and chaga powders to a high-speed blender. Blend for 45 seconds or until well mixed.
2. Pour contents of the blender into an airtight container. Whisk in chia seeds for 2-3 minutes. Cover and refrigerate overnight, or for at least 2-3 hours
3. Using a spoon, layer the chia seed pudding and dairy-free yogurt. Top with strawberries and shaved almonds if desired. Enjoy!
[Note: you can double the recipe to make a large batch of chia pudding that will stay fresh in your refrigerator for up to 3 days.]
